After working as runners, dishwashers, waiters, managers and sommeliers we decided to challenge the way we perceive wine and cider in our Nordic region. Inspired by forward thinking friends, cider and natural wine producers, we went foraging for Apples, pears, grapes. in 2016 we started out with a small 3000 bottle production at Hällåkra vineyard working with mostly foraged fruit, and today we produce over 50.000 bottles a year in central Malmö with our own fruityard in Haväng, Österlen about 1 hour to the east of Malmö close to the Baltic Sea. Haväng is our dream come true, an old school orchard with free standing trees once attached to the medieval farm “Haväng gård” just a few hundred meters from one of the longest och most scenic beaches in Sweden. It spans over 13,5 ha all situated in the natur reserve of “Verkeån” the largest river on Österlen that also runs through the orchard, or fruityard as we now call it after planting in different verities of grapes, quince and berries to complement the already existing classic Scandinavian verities of apples, plums and pears. With Fruktstereo we want to create natural alcoholic beverages without additives, using sustainably grown swedish produce without pesticides. We only use the indgenious yeast in the fruit and we will never manipulate our products in any way, we dont see as natural.       <image:title>2020 Cuvees - THE MVP - The MVP</image:title>
      <image:caption>This cuvee is a sparkling fruit wine (Fruit Pét-Nat), that consists of 70% Pears (Conference, Clapps favorit, Alexander Lukas &amp; wildly sourced varieties) and 30% apples (Gravensteiner). Most of apples and pears comes from Magnus Nilssons orchard in Axelstorp - a traditional orchard in northwest Skåne. Planted in the 1940s and today farmed without pesticides or herbicides. The wild varieties are sourced from abandoned orchards and wild trees in Skåne. The Cuvee is made with different batches of pear and apple ferments from 2019 and 2020. The different fermentations include co-fermented pear and apple cuvees, directly pressed pear juice, and batches that have undergone skin maceration. Some of the batches have been stored under flor, meaning that during fermentation, the juice protects itself from oxygen with a thin layer of yeast.</image:caption>

      <image:title>2020 Cuvees - Apple Road - Apple Road</image:title>
      <image:caption>Apple Road is our interpretation of a more traditional oxidative cider. For this cuvee we use 100% pigeon apples, as the unique flavor profile is in between a Scandinavian eating apple, and a french cider apple. The pigeon apples are tart and bitter, giving the beverage associations to a more classic french style of cider, but in a light delicate way. Apple Road has notes of almonds and salted caramel with lots of body, tannins and a very pleasant bitterness, always associated with the pigeon apple. The apples were harvested  from what we call the GRAND CRU orchard just by the Baltic Sea at Tittutvägen Kivik, Österlen. The apples were picked from free-standing trees treated without any pesticides and herbicides - A single orchard and single variety cider.</image:caption>

      <image:title>2020 Cuvees - Maybe? - Maybe?</image:title>
      <image:caption>Is this even cider anymore? We are not sure. That is why we named this cuvee Maybe, as we believe it challenges the boundaries between cider and wine. Maybe is a sparkling fruit wine (Fruit Pét-Nat) made with 65% pears (Concorde, Conference, Esperense and Herre), 25% apples (Aroma) and 10% solaris grape skins. All fruits were co-fermented for around 1 month. The result is a creamy, easy drinkable sparkling fruit wine, where the co-fermented fruits bring out the best in each other. The grape skins add structure and body, and the apples and pears adds fruitiness, giving the wine heavy tropical yellow fruit notes, such as melon, mango and papaya. The main part of the fruit is grown and harvested in Axelstorp - a traditional orchard in northwestern Skåne. Planted in the 1940s and today managed without pesticides or herbicides by Magnus Nilsson. The grapeskins come from Hällåkra, Klagshamn and Flyinge, all local grape farmers with a natural growing approach.</image:caption>

      <image:title>2020 Cuvees - Cider Stardust - Cider Stardust</image:title>
      <image:caption>Cider Stardust is a cider made with 80% apples (Gloster, Cox and Aroma), 15% pear (Concorde), and 5% wild honey. After pressing the fruit, the juice underwent a three week long skin maceration with Cox and Gloster skins, to add some tannins and structure to the cuvee. At the same time, we co-fermented the Aroma apples with honey in our amphora, before blending the cuvee together.  Cider stardust is one of our bigger and more serious cuvees. Even though the honey has fermented out, the residual sugar from the pears maintains a lot of the flavor profile from the honey. 30 % of the Fruit is grown and picked by hand from our own orchard, Haväng, right by the Baltic Sea on the east coast of Skåne. The fruit is grown without adding any pesticides or herbicides. 70% is surplus fruit from local farmers in Österlen. The honey comes from lillgården in Höör.</image:caption>

      <image:caption>We are happy to introduce our latest addition to our line of products: FRUKTROCKET. With FRUKTROCKET we will bridge the gap between cider, beer and wine, by making collaborative co-fermented drinks between Fruktstereo and Rocket brewing. We brew the wort at Rocket and ferment it in the Fruktstereo winery, adding fruit juice, berries or grapes from our own production or good friends. No rules, dogmas or confinements. Only the pursuit of boundary pushing deliciousness. Rich, deep and acidic, Grön is a wild fruit beer hybrid that combines a wheat saison with fermented apple juice. While containing the zingy frukstereo acidity, Grön is a new take on wild beers that is part beer, part cider and part wine, but very much its own entity. Grön is brewed with 60% saison wort and 40% aromatic late harvest apples (Cox, Gloster &amp; Belle de Boskoop), that have been partially skin-macerated and stored in wine amphoras. The saison has been brewed with a small amount of mosiac hops, adding depth and contrast to the fruitiness of the beer.</image:caption>

      <image:caption>Gimme gimme more. That's what you should be thinking after the first taste of this pear based ultra funky and electric cuvee. Britneys pears is made with 80% pears (Alexander Lucas and Conference) and 20% apples (Aroma), to keep the cuvee focused and balanced. Consisting mostly of pears, this cuvee retains more residual sugar than the rest of our lineup, which makes the beverage very fruity and easy to drink.  The 2020 cuvee consists of 80% Alexandre Lucas and Conference pears, gathered from all our local growers and producers, that we ferment together, in glass fiber tanks. After the fermentation, we store it for a while, before blending in 20% direct pressed Aroma apples, to balance out the pears sweetness and funky aroma. We also do this to get enough sugar for the bottle fermentation.</image:caption>

      <image:caption>TFPFKAC, is our fruit petnat that is predominantly based on macerations with red fruits. This natural sparkling fruit wine (Fruit Pét-Nat) consists of 80% Apples (Kim and Ingrid-Marie) that have been co-fermented with 10% pears (Concorde), 10% rondo grapes, plums, cherries &amp; black berries, for about a month in the same tank. Despite mainly consisting of apples, the goal with this cuvee is to use apples as a base for macerations, to extract as much flavor from the berries, plums and grapes. We also added pears, to include a bit of residual sugar, for balancing out the cuvee. The result is a big velvety fruit bomb, with lots energy and vibrance. The fruit is gathered from all over Skåne. Apples &amp; cherries from Axelstorp - a traditional orchard in northwest Skåne. Planted in the 1940s and today managed without pesticides or herbicides by Magnus Nilsson. Other fruits: Klagshamn (Malmö), Hällåkra (Grönby), Solberga (Dalby) and Haväng (Kivik); all local fruit producers with a natural growing approach.</image:caption>

      <image:title>2020 Cuvees - Gul - Gul</image:title>
      <image:caption>We are happy to introduce our latest addition to our line of products: FRUKTROCKET. With FRUKTROCKET we will bridge the gap between cider, beer and wine, by making collaborative co-fermented drinks between Fruktstereo and Rocket brewing. We brew the wort at Rocket and ferment it in the Fruktstereo winery, adding fruit juice, berries or grapes from our own production or good friends. No rules, dogmas or confinements. Only the pursuit of boundary pushing deliciousness. Where Grön is the complex and wondrous addition to the FRUKTROCKET lineup, Gul is its straightforward chuggable cousin. No amphoras or barrels; just straight up juicy pears and saison beer. Like Grön, Gul is 60% saison wort and 40% pears (Conference &amp; Alexander Lukas), that have been partially macerated to add some of the delicious pear skin flavour to the beer. Due to the pears, this hybrid cider &amp; beer contains some residual sugar, which gives balance and contrast to the funky sourness of the spontaneous fermentation. Just like Grön, the saison has been brewed with a small amount of mosaic hops.</image:caption>

      <image:title>2020 Cuvees - Daft Frukt - Daft Frukt</image:title>
      <image:caption>Daft Frukt is our fun take on a “House blend”. After racking every cuvee during the season we keep the leftover lees and sediment, and blend it together in big fermentation tanks. We let the lees and sediments settle for up to several months, and do a final racking, to separate the clear juice from the leftover lees. After racking we top up with a little fresh juice to ensure 2nd fermentation in the bottle. Daft Frukt is a fun and easy to drink cuvee, with high acidity and lots of fruitiness.  This Sparkling fruit wine (pét-nat) made of 50% apples, 40% pears, 8% solaris grapes and 2% quince.The fruit is a mix off all our available orchards and the surplus produce we get from local growers, including Haväng and Magnus Nilssons Axelstorp.</image:caption>

      <image:title>2020 Cuvees - Pulp - PULP</image:title>
      <image:caption>PULP is our maceration and amphora focused cuvee. After pressing the Cox and Gloster apples, we do a 3 week long skin maceration during fermentation. While still fermenting, we separate the juice from the pulp, and press it again to extract as much tannins, complexity and structure as possible. We divide the juice into different batches, and fermented most of the juice in our in-house amphora: A clay fermentation vessel, used for traditional Georgian wine making. PULP is rich and big, and almost more reminiscent of an orange wine, rather than a cider. The long maceration and storage in amphora provides lots of tannin structure and the right amount of volatile acidity to make it balanced. The long maceration also keeps a lot of sediment in the cuvee making the cider really creamy and adds lots of structure and body. Pulp is 100% apples (Cox Orange &amp; Gloster) and the fruit is grown and picked from our own orchard, Haväng, right by the Baltic Sea on the east coast of Skåne.</image:caption>

      <image:title>2020 Cuvees - Ciderday Night Fever - Ciderday Night Fever</image:title>
      <image:caption>Ciderday Night Fever is a rich oxidative traditional cider but with higher acidity often associated with nordic ciders. This cuvee is based on eating apples from local orchards but we also included batches of wild apples to get some more structure, richer tannins and length in the flavor profile. This dry natural sparkling cider is made of apples (Ingrid Marie 80% and Aroma 20%), and half of the juice underwent a 3 week skin maceration and storage in amphora.  The origin of the fruit is 50% Axelstorp – a traditional orchard in northwest Skåne. Planted in the 1940s and today managed without pesticides or herbicides by Magnus “Fäviken” Nilsson. 50% Haväng – right by the Baltic Sea on the east coast of Skåne in the Verkeån nature reserve. Free-standing apple trees planted in the 1940s.</image:caption>

      <image:title>2020 Cuvees - Free Your Rind - Free Your Rind</image:title>
      <image:caption>Free Your Rind is a co-fermentation project we made in collaboration with our good friend, Brian McClintic, owner of the natural wine club, Viticole. Just like ourselves, Brian's heart also lies within the unexplored field of co-fermented wines that does not limit itself to grapes. The taste is important. Not the type of fruit itself. This sparkling fruit wine (fruit pét-nat) is made together with Brian in our cellar, and consists of locally sourced apples, cherries, plums and grapes. The apples and cherries were harvested and grown at our common friend, Magnus Nilsson's fruit orchard Axelstorp in Skåne. The plums are from Solberga, Dalby and grapes from Hällåkra &amp; Klagshamn just outside of Malmö. Mixing all these fruits creates an electric and vibrant beverage, that despite its multitude of ingredients is very much its own entity.</image:caption>

      <image:title>2020 Cuvees - Cider Revolution - Cider Revolution</image:title>
      <image:caption>Let the revolution begin! Cider revolution is our signature “cider”. High acidity, super fruit and plenty of vibrant Fruktstereo energy: Ideal for food pairing or drinking on its own. Just like the 2019 cuvee, we ferment apples together with pears to keep a little bit of residual sugar. The pears also makes the cuvee light, salty and really easy to drink. Cider revolution gets its taste from 3 weeks of skin maceration with the leftover pulp from the press. While fermenting some of the batches develop flor, that brings a bit of oxidative notes and saltiness. We ferment the pears and apples separately, and blend just before bottling the cuvee. Cider revolution is cider made of 80% apples (Cox Orange &amp; Gloster) and 20% pears (Clara Friis &amp; Conference). 30% of the fruit is from  Haväng – right by the Baltic Sea on the east coast of Skåne in the Verkeån nature reserve. 70% is surplus fruit from local growers in Österlen and northern Skåne.</image:caption>

      <image:title>2020 Cuvees - Yellow Fruktmarine - Yellow Fruktmarine</image:title>
      <image:caption>Yellow Fruktmarine is our experimental co-fermentation cuvee, that combines apples (60%) and pears (25%) with carrots (5%), honey (5%) and sea buckthorn (5%). We ferment the carrots together with apples and age in tanks for at least one year, to integrate the carrot flavor. Afterwards, honey and apples are fermented together, and undergo skin maceration with apple skins, and sea buckthorn berries for about two months. We also add in 25% pears, to let the residual sugar underline the flavors of honey and sea buckthorn. The flavour profile is very tropical from the sea buckthorn with notes of passionfruit and papaya. The lacto fermented carrots adds lactic acidity and a small amount of saltiness.  Apples &amp; Pears were grown and harvested in Axelstorp, a traditional fruit orchard planted in the 1940s and 1960s  in the northwestern part of Skåne. Carrots grown on the island of Gotland at Nyplings gård. Honey from mixed spring flowers picked by Lillgården in Höör. Sea buckthorn was wildly foraged in our local surroundings of Malmö.</image:caption>

      <image:title>2020 Cuvees - Plumenian Rhapsody - Plumenian Rhapsody</image:title>
      <image:caption>Plumenian Rhapsody is where co-fermentation started for us at Fruktstereo. With this cuvee we mix apples (Kim &amp; Aroma), plums (different varieties) and red grapes (Rondo), to push the boundaries within cider and fruit wines and create something new. This sparkling fruit wine (Fruit Pét-Nat) is a season-long fermentation project. It starts with early plums and apple varieties in august, that we continuously top up and re-ferment several times with new fruits during the harvest season. We only use the best available produce in peak maturity so every vintage changes a lot depending on taste and coincidences. The 2020 rendition has lots of freshness from the apples, tartiness and funkyness from the plums and structure and grip from the grapes. A big and concentrated cuvee. Plumenian Rhapsody is made of fruit from Skåne, apples (65%) from Solberga, an old abandoned orchard in Dalby, plums (30%) from Kivik and grapes (5%) from Hällåkra and Klagshamn.</image:caption>

      <image:title>2020 Cuvees - Definitely Cider</image:title>
      <image:caption>Definitely Cider Definitely Cider is our idea of what a “clean” disgorged scandinavian cider should taste like. This cuvee is based on 80% crisp apples (Aroma apple), and 20% pears (Conference pears). The apples give the cider body and structure, and the pear makes the beverage funky, energetic and very alive. As pears don't ferment out, it keeps some natural residual sugar, which gives a bit of sweetness in the cider. To underline the ciders' freshness and energy, we disgorge the cuvee to make it lighter and more clean. This also helps with maintaining the carbonation longer, making it ideal for selling by the glass. The fruit is grown and harvested in Axelstorp – a traditional mixed fruit orchard with free-standing trees in the northwest of Skåne. The orchard resides on a beautiful  hill overlooking Laholm Bay and surrounded by a natural reserve. The orchard dates back to the 1940s and today it is managed by our good friend, Magnus Nilsson, without any use of pesticides or herbicides.</image:caption>
