CIDERDAY NIGHT FEVER 2022

!00% apple cider with fruit from our farm at Haväng, Österlen the very south of sweden. Spontenious fermentation and without adding sulphites.

Verities: Ingrid-Marie, Cox and wild crab apples.

Skinmacerated for 3 weeks. Fermented partly in Amfora.

Tour de frukt 2022

What we call a fruit Pet-Nat. A blend of apple and white grapes to bring out the best of each outher and create this “orange” tropical fruity bomb that is Tour de frukt.

Verities: Ingrid-Marie and Aroma apples and Solaris grapes.

Skinmacerated with the grapeskins for 3 weeks.

CHATEAU NUBBGATAN ORANGE

A still fruit wine in an “orange”style. Like a fruit Pet-Nat without bubbles or just like a orange wine with more then one fruit. This is a blend of Apples, white grapes, pears and quince. High in tannins, big on tropical fruit and low in alcohol.

Verities: Apples, Pears, Solaris grapes and quince(from two gardens in central Malmö)

Skinmacerated with quince and grapeskins for 3 weeks and stored in amfora and oak barrels.

UMESHU

This fortified plum wine is our hommage to the classic Japanese UMESHU. We use plums from our farm at Haväng, trees that is around 40-50 years old and Swedish clissoc verities. Step 1 we make a plum wine by semi maceration carboinic. Step 2 the wine is racked in to barrel and the meat and stones get destilled(dubbel). Step 3 pour the destilled plum spirit on green unripe plums year 2. Step 4 after another year blend the spirit with plum wine from barrel and unfermented plum jiuce for sufare. Step 5 blend the UMESHU blend with maceration carbonic plums for fresh, fruity and young plum fruit flavour after another year of storing and sweeten with honey. All in all around 4 years in the making. 98% Plums 2% Honey. 120g/L and 14% abv.

NA - HAVÄNG non-alcoholic cider & Spritz

We love making NA, we do all of our NA drinks with our own fruit from the farm at Haväng and bring the knowledge and understanding of how to make good non-alcoholic adult beverages from our years in the restaurant industry. We make them on the dryer and fresher side and with quality and as much love as we give all of our drinks.

HAVÄNG non-alcoholic cider. 25cl Bottles / 75cl Bottles

A blend of early and late verities of apple to gain a greater complexity blended with piquette of late verities like Cox and Ingrid-Marie as well as de alcoholised cider that we store in barrel for six months to one year. Suger content 60g/L abv less then 0,5%.

SPRITZ non-alcoholic cider. 25cl cans

The SPITZ is a more refreshing lemonad style cider where we blend juice of apple with different piquettes. Lower on sugare and very refreshing. For now we have a “GREEN” - Grape, pear and apple piquette with apple juice. “YELLOW” - Quince, grape, apple piquette with a bit of quince vinegar to make it a bit more edgy. “PURPLE” - Plum, red grapes and apple piquette pinkish in colour and very red berrie fruity creamy. All piquettes are spontaniusly fermented and blended to a maximum of 50g/L of sugar.
